The Italians reacted with anger after the British Good Food site published a recipe for a traditional preparation, which did not include the correct original ingredients and seemed to minimize it as a fast food.

The Good Food recipe described Cacio is Pepe as a table that can be prepared “For a fast lunch” USING “Four simple ingredients, pepper, parmesan and cream”, writes BBC.

FIPET CERFOSERCENTI, an association representing the restaurants in Italy, was declared “Amazed” to see the recipe on a gastronomy site so appreciated, adding: “There are no four ingredients, but three: pasta, pepper and pecorino.”

Chef Giorgio Eramo, near St. Peter's Square, was scorching: “What they did is called Alfredo paste. Another story, another plate.”

Several journalists and cooks in Rome reacted by criticizing the idea of using cream – “For God's sake, the cream is for desserts!”

“It's terrible!”says Giorgio Eramo, the owner of a pasta restaurant

Maurizio and Loredana run a hotel in the center of Rome, which belongs to their four generations family. The two say that “You have to give Caesar what is Caesar! ”.

“You can make all the variations in the world, but you cannot use the original Italian name for them. You cannot say that it is Cacio is Pepe if you put butter, oil and cream in it. Then it becomes something else ”, Maurizio said.

“It's terrible. It's not Cacio is Pepe”

Giorgio Eramo runs a restaurant with fresh pasta near Saint Peter Square, where Cacio is Pepe and other traditional pasta.

“It's terrible. It's not Cacio is Pepe … what's Lood Food published, with butter and parmesan, is called Alfredo paste. It's another kind of pasta.”he said.

Eleonora, who works in a popular cafe in the center of Rome, says she understands why the Italians got so upset.

“Our tradition is based on food. So if you touch us the only thing we have, all over the world … this can make us feel a little sad,” said the young woman.

Cacio is Pepe, a symbol of Roman Rome and cuisine, along with Paste Alla Carbonara, Paste All'amatriciana and Paste Alla Gricia, according to an Italian culinary block,

Cacio is Pepe has only three ingredients, according to the original recipe: pasta, usually tonnarelli, spaghetti with thicker egg (fresh or dried), pecorino Romano Dop and black pepper, which must be used whole and freshly ground. Another key ingredient is the boiling water of pasta, rich in starch, which is used to create the famous pecorino cream.
