Not jam or pie: top 3 delicious currant desserts – you'll lick your fingers

The currant season will begin very soon, and some varieties ripen not only in July, but also at the end of June. If every year you wonder where to put a bucket of sweet ripe berries, and are already tired of rolling up jars of jam that you don’t have time to eat, then expert Dmitry Zmievsky has suggested alternative recipes with currants.

1. No-bake cheesecake

All you need to make this summer dessert is a blender. Grind shortbread cookies (200 g) in it, then mix it with melted butter (80 g). Place the mixture in a springform pan lined with parchment, smooth it out and put it in the refrigerator for half an hour.

Then prepare the filling. Wash and chop the currants (150 g) in a blender. In a separate container, whip cold cream (200 ml), add sugar (80 g) and cottage cheese (400 g) and beat again until smooth. Pour in the crushed berry mixture and stir.

Gently spread the filling over the surface of the cooled shortbread base and return to the refrigerator overnight.

2. Smoothie for a summer snack in 2 minutes

Place washed currants (150 g), chopped banana, yogurt (200 ml) and a teaspoon of honey into a blender and blend for a minute until smooth. Pour the smoothie into glasses and enjoy.

By the way, on a particularly hot day, you can add a couple of ice cubes to the drink.

3. 3-ingredient ice cream

Grind the currants (250 g) in a blender until pureed. In a separate bowl, mix cream (250 ml) and condensed milk (100 g). Then add currant puree and mix again. Transfer the mixture to a container with a lid and put it in the freezer.

Life hack: for the first 3-4 hours, take out the container every hour and stir the ice cream – this way it will be without crispy ice crystals. And dessert will be ready in 6 hours.
