
A frequent guest on winter tables is, of course, cabbage. But among the many recipes, there is one particularly successful one. We're talking about Petrovsky-style cabbage – a simple, easy-to-prepare and at the same time extremely crispy appetizer that will be an excellent addition to meat, potatoes, side dishes, or completely replace salad for dinner.
Although outwardly unpretentious, this recipe is appreciated for its balanced taste: a sweetish-salty base, an aromatic vegetable bouquet, a soft sourness in the aftertaste and a characteristic piquancy due to garlic and vegetable oil. And the bright appearance makes the dish look like a full-fledged winter salad.
Ingredients (per 1 kg of cabbage):
- white cabbage – 1 kg;
- carrots – 1 pc.;
- onions – 1 pc.;
- garlic – 1 clove;
- vegetable oil – 2 tbsp. l.;
- vinegar – 1 tbsp. l.
All ingredients are available at any time of the year, so Petrovsky-style cabbage can become a universal appetizer for the everyday menu.
Cooking method:
Finely chop the cabbage, grate the carrots and finely chop the garlic. Cut the onion into half rings. Mix vegetables in a deep bowl. In a separate saucepan, dissolve salt and sugar in water and bring to a boil. Add vinegar and vegetable oil to create a fragrant marinade. Pour the boiling marinade over the vegetables, cover with a lid and leave to cool to room temperature. After 3-4 hours you can serve it – the cabbage will have time to marinate and become pleasantly crispy.
The dish keeps well in the refrigerator, and over time the taste becomes even richer. Due to the combination of vegetables, cabbage remains bright, juicy and does not lose its appetizing texture.
