
The zucchini season is beginning, and Ukrainian culinary blogger Ivan Yanyuk advised us to prepare an incredibly tasty salad from them.
“Cook a double portion at once – the zucchini salad disappears in an instant,” the blogger advised.
He added that the salad is very easy to prepare, and its aroma is incredible.
Products:
- four medium zucchini;
- two bell peppers (red and yellow);
- 10 g dill;
- 10 g parsley;
- four cloves of garlic;
- 50 ml vegetable oil;
- 1 tbsp. l. Sahara;
- 1 tsp. ground coriander;
- 1 tsp. smoked paprika;
- black pepper – to taste, salt – to taste;
- 3 tbsp. l. soy sauce;
- 2 tbsp. l. apple cider vinegar.
Cooking method
- Wash the zucchini and cut them into thin slices.
- Cut the bell pepper into thin strips.
- Chop the dill and parsley.
- Transfer vegetables and herbs to a large bowl.
- Heat the oil until hot.
- Grate the garlic and place it in the center of the salad. Add sugar, coriander, smoked paprika, salt and black pepper.
- Drizzle hot oil over spices. Add soy sauce and apple cider vinegar. Mix the salad thoroughly.
- Leave to infuse for 20 minutes.
- Serve the salad chilled with barbecue, fish or other grilled dishes.
