Cutlets in 15 minutes: I cook from frozen – they taste better than in a cafe

At the end of February, I want something homemade, warm and satisfying, but I have almost no energy for long cooking. Meanwhile, preparations are already waiting in the freezer: vegetables, herbs, even minced meat. The perfect time to use them is for a quick dinner that will please the whole family and won't break the budget.

We present to you a recipe for tender vegetable cutlets made from frozen mixture. They turn out juicy, aromatic and cook very quickly.

You will need:

Frozen vegetable mixture – 300 g
Egg – 1 pc.
Semolina or oatmeal – 2-3 tbsp. spoons
Garlic – 1 clove
Salt, black pepper, paprika – to taste
Vegetable oil – for frying
optional – dried herbs or a pinch of ground coriander

How to cook:

  • Thaw the vegetable mixture.
  • You can simply leave at room temperature for 10 minutes or squeeze lightly after heating in the microwave.
  • In a bowl, mix vegetables, egg, spices and semolina or chopped oatmeal.
  • Let stand for 5 minutes. The semolina will swell and bind the mass.
  • Form small cutlets and fry in hot oil for 3-4 minutes on each side until golden brown.
  • Serve hot with sour cream, natural yoghurt or light garlic sauce.

These cutlets are the perfect weeknight dinner. And if you serve them on a beautiful plate with greens, they can easily turn into a festive dish for March 8th.
