
To prepare a soft and flavorful meat stew, you don’t need to choose the most expensive cuts. It is enough to take inexpensive beef and marinate it according to a simple recipe with kefir and spices.
What you will need:
Beef – 800 g
Onion – 2 large onions
Kefir – 300 ml
Vegetable oil – 2 tablespoons
Paprika – 1 teaspoon
Garlic – 3 cloves
Salt – to taste
Bay leaf – 2 pieces
How to cook:
- Cut the beef into 3-4cm cubes.
- Chop the onion finely, pass the garlic through a press.
- Mix meat with onion, garlic, kefir, vegetable oil, paprika and salt. Mix well with your hands so that each piece is coated with the marinade.
- Leave for 3-4 hours at room temperature or overnight in the refrigerator. The fermented milk base will soften the fibers, and the spices will add a deep taste.
- Place all the contents in a saucepan or cauldron, add bay leaf and simmer over low heat for 1.5–2 hours, stirring occasionally.
The meat will turn out incredibly tender, with a rich aroma and a slight sourness from kefir. It goes well with mashed potatoes, buckwheat or fresh bread.
This marinade turns even tough pieces into a homemade dish worthy of a holiday table.
