
In the Year of the Horse, dishes associated with space and freedom are especially appropriate on the table, and this salad is just that. Light, crispy and memorable, it is refreshing after a hearty snack and symbolizes energy, movement and a successful start to the new year.
Ingredients (for 3-4 servings):
· Mix of lettuce leaves (arugula, spinach, romaine) – 100–150 g
· Cucumber – 1 pc.
· Carrots – 1 pc.
· Orange or tangerine – 1–2 pcs.
Avocado – 1 pc. (optional)
· Walnuts or almonds – 40–50 g.
· Olive oil – 3 tbsp. l.
· Honey – 1 tsp.
· Grainy mustard – 1 tsp. l.
Lemon juice – 1.5 tbsp. l.
· Salt, pepper – to taste
Preparation:
Wash the leaves, dry and tear them with your hands. Cut the cucumber into half circles, carrots into thin strips or slices with a vegetable peeler.
Peel the orange from the film, cut into slices; avocado – cubes. Lightly dry the nuts in a dry frying pan and chop coarsely.
Mix oil, honey, mustard, lemon juice, salt and pepper in a bowl.
In a large bowl, combine herbs, vegetables and fruits, sprinkle with nuts, season with sauce, and before serving, place on a horseshoe-shaped dish.
