Late varieties of cabbage with dense heads without signs of spoilage or damage are suitable for storage.
Before storing, you need to remove excess leaves from the heads of cabbage and cut off the stalk, leaving about 3 cm. After this, the cabbage should be left for a day in a cool but well-ventilated place – for example, under a canopy or on a veranda.
“The most important thing for successful storage is the correct microclimate. The ideal temperature for cabbage is from 0 to +2 ° C, and air humidity is between 90–98%. At a lower temperature it will freeze, and at a higher temperature it will begin to germinate and rot. Dry air will lead to wilting, so an ordinary dry basement is not the best place. A cellar is best suited for this,” the article says.
How to store cabbage
- Hang the heads of cabbage so that they do not touch each other.
- Store in sand boxes. To do this, pour a layer of dry sand on the bottom of a wooden box, place the heads of cabbage at a distance from each other so that they do not come into contact, and lightly sprinkle with sand. Sand will remove excess moisture and stabilize the temperature.
- Wrap the heads of cabbage with paper or film and store them in the cellar.
- Check the cabbage periodically to promptly remove those heads that show the first signs of spoilage.
