
Every year after harvesting, many people thoroughly wash their potatoes to keep them looking clean and tidy. However, by winter such tubers often begin to rot, sprout or become soft. The reason is simple: moisture on the surface creates ideal conditions for mold and bacteria. The natural thin film of dust that remains after digging protects the potato in the same way that the peel protects an apple. Washing it off violates this protection and shortens the shelf life. The author of the Zen channel “Kitchen from the Inside” (12+) spoke about this.
It's best to do it differently. After harvesting, the potatoes should be placed in the shade: under a canopy, on a balcony or in a cool place, but not in direct sunlight. In 2–3 days, the soil on the tubers will dry out and become easy to shake off with your hands or a soft brush. There is no need to use water. Even a little moisture can trigger early germination or rotting.
Particular attention should be paid to the storage location. Potatoes do not tolerate light: under its influence, a green tint appears on the skin, which indicates the formation of solanine, a toxic substance. Such tubers should not be eaten, especially by children. Therefore, it is better to store potatoes in closed boxes, burlap bags, or simply cover them with a cloth to exclude light but maintain ventilation.
Once a month it is useful to sort through the supplies: remove sprouted or suspicious tubers. Toxins accumulate in the sprouts, as well as in the green peel, so it is better not to use such specimens.
If the potatoes are still slightly damp, you can sprinkle them with wood ash or chalk. These substances absorb excess moisture and inhibit the growth of microorganisms. For storage in an apartment, paper bags are preferable to plastic ones: they allow the tubers to “breathe” and reduce the risk of condensation.
The main rule for long-term storage is dryness, darkness and a stable cool temperature. If these conditions are met, the potatoes remain firm, healthy and suitable for consumption even in the spring.
