Why gastronomy stars Michelin? “Granting a decoration is a loud, important event”

Michelin stars are of great importance, they can have a great impact on the number of customers and the prestige of the restaurant – the president of the Chamber of Commerce for Polish Gastronomy Sławomir Grzyb told PAP. He drew attention to the contribution of famous foreign chefs to the development of Polish gastronomy.

The Michelin guide has been appearing on the market since 1900. One star means that the restaurant serves a high -level kitchen, very good in its category. Two – this is a great kitchen in which sophistication and talent are manifested. Three – this is the kitchen whose creators have achieved the heights of talent and can be considered a work of art. According to Michelin, there are five assessment criteria: the quality of products, combination of flavors, proficiency of culinary techniques, the way the cook's individuality and the consistency of the entire menu are manifested in dishes.

The Michelin Polska guide, as reported on Tuesday, currently includes 108 restaurants, including a new restaurant awarded with Michelin star, which increases the number of premises with this prestigious decoration to seven.

Warsaw was joined by Warsaw hub.praga. This is the sixth restaurant in Poland with one star; one place – Krakowska Bottigleria 1881 – He has two stars. One star was maintained by: Arco by Paco Pérez in Gdańsk, Giewont in Kościelisko, Muga in Poznań and Warsaw note and Rozbrat 20.

In addition to the new Michelin star, seven more Bib Gourmand awards for Polish restaurants were also announced. This award, named after Bibendum – the official name of the Michelin guy – is awarded to premises offering a high -quality kitchen at a reasonable price.

“Michelin stars are of great importance, not only in Poland, but also around the world. In Poland, this tradition of granting stars is not long, but customers are interested in such restaurants; awarding a decoration is a loud, important event” – noted Sławomir Grzyb from the Polish Gastronomy Chamber (IGPP) in an interview with PAP.

In his opinion, customers who care about “artistic and flavor experiences certainly use awarded premises, check them”. “I suspect that this has a great impact on the number of visitors to guests,” he said.

He noticed that the number of Polish restaurants with Michelin stars is small, so the competition is negligible. “The more stews are, the more two and three -star. This is natural,” he said, adding that he sees “space to fill”.

According to the mushroom A small increase in the number of awarded Polish restaurants suggests that “evolution” is needed related to the overall increase in the quality of gastronomic services and the quality of life.

The IgGP representative drew attention to the effort that is associated with running the awarded restaurant. “On the one hand, you need to provide a certain level of standard and keep it. On the other hand, customers willing to try such a sublime kitchen must be enough to maintain the financial liquidity of the premises” – he emphasized.

In the opinion of an industry representative, efforts to raise the level of Polish restaurants similar to French premises initiated many foreign, well -known and respected chefs, as well as gastronomic celebrities. The mushroom replaced such characters as Kurt Scheller, Giancarlo Russo and Jean Boss.

Witek Iwański is the owner of the HUB.PRAGA restaurant awarded on Tuesday by Michelin. PAP interlocutor indicated that he has known him for 20 years. “Then he won in the Culinary Cup of Poland 2006. He made a great impression on me when I met him in Luxembourg on the Culinary World Cup 2010, where he came as a young chef at his own expense. I support him to this day in the difficult path of the entrepreneur” – noted the mushroom.

This year, in addition to new stars and distinctions, Bib Gourmand, four Michelin special awards were also awarded For exceptional people and teams, which in recent months particularly delighted the inspectors of the Michelin guide.

“I am glad that the Michelin guide in Poland has been expanding again, covering the dynamic, and at the same time delightful in terms of architecture Wrocław. Our famous anonymous inspectors found many restaurants worth recommending here – including three, which deserved the distinction of Bib Gourmand” – commented the international director of Michelin Gwendal Poullennec guides, quoted in a communication media.

“Traveling around Poland, the inspectors were impressed by the pace at which the local culinary scene develops. The new generation of chefs willingly reaches for local ingredients, while shaping the modern style of the native kitchen, doing it with an extremely positive attitude. I am also very happy that Poland has gained another restaurant with Michelin star. This is great news for the entire domestic gastronomic industry” Pullennec.

Stars awarded by the Michelin guide is a tradition that dates back to over a hundred years. In Poland, the star for the first time in 2013 was a restaurant from Warsaw, then – in Krakow, Poznań, Kościelisko, and Gdańsk.

The Chamber of Commerce for Polish Gastronomy was registered on July 28, 2020 and currently brings together 834 restaurateurs. (PAP)
