
Idaho potatoes are aromatic slices that are cooked in the oven and covered with a delicious golden crust. Their top layer is crispy, but the flesh inside remains tender and melts in your mouth. This dish feels great next to meat or fish, and it can also be served just like that, with some sauce, as an independent snack.
What products should you buy?
The list of ingredients is short and inexpensive: take a kilogram of potatoes, three tablespoons of vegetable oil, a teaspoon each of paprika and dry garlic, salt and black pepper – everything to taste. If desired, you can add dried herbs, and fresh herbs are useful for serving.
It is best to take medium-sized tubers with dense pulp. They are washed thoroughly, but it is not necessary to peel them – it is with the peel that the slices turn out especially tasty. Each tuber is cut into 6–8 pieces, and if the potatoes are large, you can make the pieces thinner.
Step by step recipe
First, the prepared slices are dipped into boiling salted water. Cook them for 5 to 15 minutes – the exact time depends on the size of the pieces. This trick allows you to achieve that very tender middle.
While the potatoes are cooking, in a separate bowl, mix together the oil, paprika, dry garlic, salt, pepper and any dried herbs you want. When the potatoes are cooked, the water is drained, the slices are cooled and slightly blotted from excess moisture, and then mixed thoroughly with the aromatic oil mixture.
After this, the slices are placed on a baking sheet covered with parchment or simply lightly greased with oil. It is important to lay them out in one layer so that they do not lie on top of each other. Preheat the oven to 220°C and bake the potatoes for about 30–40 minutes. In the middle of cooking, you need to take out the baking sheet once and turn the slices over – this way the crust will brown evenly.
What to serve the finished dish with
Idaho potatoes go well with a variety of sauces – garlic, cheese or regular ketchup. It is good as a side dish for meat, chicken or grilled vegetables. You can also simply sprinkle it with fresh herbs and serve it on its own.
