Lazy kebab made from minced meat and lavash: 20 minutes – and the meat delicacy is on the table

Are you dreaming of a barbecue, but it’s raining outside, or you just don’t want to bother with the grill? There is a way out. Just one sheet of pita bread, a little minced chicken and a quarter of an hour of waiting – and a dish appears on the table that is in no way inferior to charcoal-fried meat.

Ingredients

  • thin pita bread – 1 sheet;
  • minced chicken – 400–500 g;
  • salt – to taste;
  • favorite spices (black pepper, paprika, coriander, etc.) – to taste;
  • fresh herbs (dill, parsley, cilantro or green onions) – a small bunch;
  • egg – 1 piece (for gluing the edges).

How to cook

Place minced chicken in a bowl. It is salted to taste and any favorite spices are added – for example, black pepper, paprika, coriander or ready-made seasoning for chicken. Mix everything thoroughly so that the spices are evenly distributed throughout the meat.

Fresh greens are washed, dried and finely chopped with a knife. Dill, parsley, cilantro or green onions are suitable – as desired or according to what is on hand.

A sheet of thin pita bread is spread on a flat surface. Place all the minced chicken evenly on it, leveling it with a spoon or spatula. Sprinkle chopped herbs on top.

Then the pita bread with filling is tightly rolled into a roll. It is important to roll tightly enough so that the roll does not fall apart during the cutting and baking process.

To prevent the edge of the roll from peeling off, crack one egg into a small bowl and lightly beat with a fork. The last centimeter of pita bread is coated with a raw egg, after which it is rolled up to the end and pressed lightly – the egg will work as a natural glue.

The resulting roll is cut into small pieces with a sharp knife. The optimal thickness of one piece is about 2–3 centimeters.

Each piece is threaded onto a wooden skewer or short kebab stick. The skewers can be pre-soaked in water for 10 minutes to prevent them from burning in the oven.

Place the skewers with the preparations on a baking sheet covered with parchment or foil. The oven is heated to 200 degrees. The dish is placed in the oven for exactly 20 minutes. During this time, the minced meat will be completely baked, the pita bread will become golden brown, and the dish itself will take on an appetizing appearance.

The finished kebabs are removed from the oven and served hot. They go well with fresh vegetables, sour cream sauce or tomato ketchup. You can also complement the dish with vegetable salad or pickled onions.
