
There are a number of common mistakes that turn rice into sticky, overcooked grains with an unpleasant odor. Expert Dmitry Zmievsky told how to achieve lightness and crumbliness of this dish.
Lifehack #1: Choosing the right rice
This cereal has different varieties. For example, to get the perfect fluffy rice, choose a long-grain variety. Dense and sticky round grain is suitable for porridges. Basmati will provide a bright, airy taste, and the jasmine variety will delight you with delicate and soft notes.
The proportions of water depend on the variety. Thus, the ratio of grain to water for long grain rice is 1 to 1.5-1.7, for basmati and jasmine – 1 to 1.5, for short grain rice – 1 to 2.
Lifehack #2: Rinsing is a must
There is starch on the surface of the grains, which is responsible for the stickiness of rice. To rinse the cereal, pour it into a bowl, pour it with a cold hand, stir and drain. Repeat this about 5 more times, the water should become clear after stirring.
Then soak the rice in water for half an hour so that the cereal absorbs moisture – this will cook it faster.
Lifehack #3: Stirring is prohibited
After the water boils, turn the heat to low and cover with a lid. Do not stir the rice under any circumstances. After turning off the burner, do not open the lid or release steam for another 10 minutes.
