PanParagon application experts analyzed price changes for the entire basket of products most often used to prepare vegetable salad.
The data shows that in 2026, the total cost of such a set was higher by approximately 5.7%. compared to 2024 This is the result of renewed increases in prices of most ingredients, visible after a temporary stabilization a year earlier.

In turn, among the ingredients used for vegetable salad, the products that stand out are consistently more expensive from year to year. The greatest increase was recorded by celery – its median price in 2026 is 30.33% higher. than in 2024. During the same period, the prices of eggs (by 20%) and potatoes (by 6.36%) also increased significantly. It is these basic ingredients that have the greatest impact on the higher cost of preparing a salad today.

The situation is different for some vegetables, which became significantly cheaper in 2025, only to become more expensive in 2026. The median price of pickled cucumbers dropped from PLN 10.99 to PLN 9.29 gr per 1 kg (i.e. by 15.47%), and then increased to almost PLN 10 (by 7.53% year to year).
Similarly, leek – its median price decreased from PLN 4.99 to PLN 4.29 (a drop of 14.03%), to increase to PLN 4.49 (by 4.66%) in 2026. The same pattern can be seen in the case of carrots (a decrease of 7.92% and then an increase of 7.45%) and parsley (first a decrease of 0 8.35%, then an increase of 5.46%). Although some of these products are still cheaper than two years ago, the data shows that the declines were rather temporary, the analysis says.
— Today, the biggest influence on the higher cost are eggs and root vegetables, which constitute the base of the salad. At the same time, processed products such as mayonnaise or peas remain relatively price stable and contribute less to the final bill.
