
Maslenitsa is a time of joy, not a feeling of overload. These pancakes turn out airy, with holes and a soft center, but at the same time they do not leave a “stony” feeling in the stomach. They are prepared from simple ingredients, without sugar and excess oil, and everyone eats them with pleasure, even those who usually avoid healthy foods.
Ingredients:
chicken eggs – 2 pcs.
whole grain flour – 100 g
oat flour – 60 g
whole milk – 450 ml
liquid stevia extract – 1/2 tsp. or 1 tbsp. l. honey – optional
vanillin – on the tip of a knife
corn or sunflower oil – just a little to grease the pan
How to cook:
- Beat eggs with stevia extract and vanilla.
- Add warm milk and both types of flour.
- Mix until smooth, preferably with a whisk or mixer to avoid lumps.
- Let the dough sit for 15 minutes, this will make the pancakes more tender.
- Heat a non-stick frying pan.
- Lubricate with just a drop of oil or don't grease at all if the pan is good.
- Pour the batter into a thin layer and fry until golden brown on both sides.
- Serve warm.
