
Editorial team of the Ukrainian culinary website Shuba published a recipe for dough for fried pies.
“Fried pies are a classic of Ukrainian street food that you can’t tear yourself away from. The basis for success is the correct dough for pies: soft, elastic, easy to form and does not absorb excess oil during frying,” the website says.
Ingredients:
- 250 ml milk;
- 15 g pressed yeast;
- 20 g sugar;
- salt to taste;
- 1 tbsp. l. vegetable oil;
- 400 g flour.
Preparation
- Mix warm milk, sugar, yeast, salt, vegetable oil and 2 tbsp. l. flour. Cover with a towel and leave in a warm place for 20 minutes.
- Add the dough and the rest of the milk to the flour. Knead into a soft, homogeneous dough. Cover with a towel and leave for another 30 minutes.
- Divide the dough into portions, roll them out and fill them with your favorite filling. Pinch the edges of the dough to form pies. Cover the product and let it sit for 10–15 minutes.
- Heat a frying pan with vegetable oil and fry the pies over medium heat on both sides until golden brown.
