“Doner-semi-finished products may be called “shawarma” or “shawarma” on the territory of the Russian Federation”
We are showing the first edition of GOST for shawarma, which will appear in the Russian Federation by the end of 2025. In short: the meat of cats and dogs is prohibited, it is forbidden to sneeze and spit in the sauce, chew gum nearby and live. If long:
— Ready meat should “live” no more than 2–3 hours from the moment of production. Salads and sauces must be sold within one hour.
— Shawarma can be made from beef/veal meat, lamb meat, lamb, goat meat, from poultry meat – chicken/chickens/broilers/turkey, from pork meat.
— It is forbidden to leave finished shawarma for the next day.
— Workers are required to wear sanitary clothing, be clean and tidy. Wash your hands thoroughly immediately before preparing. […] Report any infections in family members.
— Workers should use masks and disposable gloves when preparing salads.
— Workers will be prohibited from smoking, chewing gum and other unhygienic habits. For example, spitting (nasvay?).
— Accommodation is prohibited in food establishments; storage of personal belongings and indoor plants is not allowed in production premises.
— Recipe for shawarma: wheat flatbreads, pita bread, pita bread, sauces, fresh and pickled vegetables, potatoes, herbs. Additional: spices, cheeses, nuts, seeds, eggs and so on.
