
Looking for a spectacular dish for dinner or a holiday table? Try potatoes with sun-dried tomatoes baked in smoked bacon – this is a tasty, filling and very aromatic appetizer that works great both as a side dish and as an independent dish. It’s easy to prepare, served in portions – and looks truly festive!
Ingredients (for 7 servings):
- Potatoes – 650 g (7 medium-sized tubers)
- Smoked bacon – 120 g (about 7 strips)
- Sun-dried tomatoes in oil – 90 g (1 piece per potato)
- Dried garlic – to taste
- Salt – to taste
- Ground black pepper – to taste
How to cook:
- Prepare the potatoes. Choose tubers that are approximately the same size so they will bake evenly. Clean and rinse thoroughly.
- Cut each potato in half. Lightly salt, pepper and sprinkle dried garlic on both halves.
- Assemble the filling. Place one sun-dried tomato on one half, then cover with the other half.
- Wrap in bacon. Wrap each potato “book” tightly with a strip of bacon – it will not only add flavor, but also fix the filling.
- Wrap in foil. Wrap each piece carefully but tightly in a piece of foil – this will retain the juices and speed up cooking.
- Bake. Preheat the oven to 20 h200 °C. Place the parcels on a baking sheet and bake for about 30 minutes until the potatoes are tender and the bacon is crisp.
Innings:
Serve hot or warm, carefully unfolding the foil directly on the plate. The dish looks spectacular even without decorations: golden brown bacon, aromatic potatoes and rich tomatoes create the perfect flavor ensemble. Goes great with meat, poultry, grilled vegetables – or just with a green salad and a glass of wine.
