This is the only way to wash cereals and beans – no bitterness or “foam”: how to remove dust, starch and chemicals before cooking

Cereals and legumes are the basis of a healthy diet. But even in transparent packaging they can contain dust, chemical processing residues, excess starch and insects, which sometimes infest during storage. If you simply pour them into a pan, the dish may turn out bitter, cloudy, with foam on the surface or an unpleasant odor.

Simply rinsing under the tap is not enough. To be sure of cleanliness, you need to know the right way.

For buckwheat, rice, millet and pearl barley:

Pour the cereal into a bowl, cover with cold water and mix gently with your hands. The water will immediately become cloudy. This is starch and dust. Drain and repeat 3-4 times until the water runs clear. For millet and pearl barley, you can add a pinch of salt to the last water. This will remove the bitterness.

For lentils, beans, peas:

Pour cold water over the beans and leave for 10-15 minutes. Then drain. The remaining dust and larvae, if any, will go away with the water. Rinse 2-3 more times under running water until the water runs clear. This will also reduce gas after eating.

Before cooking, always sort out the grains; even in the packaging you may find pebbles or dark grains. For legumes, change the water after soaking, even if you don't soak them for long.

After this preparation, the porridge will be crumbly, the soup will be clear, and the lentils will be free of foam and strange odors.
