The iconic Wrocław pub has shown its costs. “Without Januszowanie”


If someone lives in Wroclaw and likes pizza, it is unlikely to never eat there. Vaffanapoli is a cult pub at ul. Włodkowica, five minutes walk from the market.
From 2017, in the restaurant we will eat a typical Neapolitan pizza – on thin dough, with grown edges. Without such a popular garlic sauce in Poland. In recent days, the premises got loud due to the Facebook post, in which the owner decided Once and for all, deal with the questions: “Why is pizza so expensive?”
The Facebook post, which was very widely heard in the gastronomy industry, is the effect of entries that appeared after a visit to the premises of the well -known influencer and thicker, and at the same time restaurateur uncle Paolo. Although he himself issued Vaffanapoli a good review, in the comments Internet users criticized prices in the premises.
Restaurant costs. “Without Januszowanie”
The restaurant owner shared examples of costs and revenues from his activities. As he revealed, he employs 24 full -time people. “Let's assume that the average rate from OLX: PLN 30 per hand (49.5 gross), this gives a total of: PLN 200,000 gross per month – with the costs of the employer” – we read.
“Of course, all of the above considerations are based on running a restaurant without Janudiaz (contracts, reasonable earnings and good products) Well, with waiter service ” – adds the owner.
Labor costs are one thing. But there are still different ones. For the premises and related fees: rent, media, garbage disposal, ZAiKS and other Vaffanapoli pays 115,000 a month. zloty.

All this collected in poop gives us costs of 505 thousand. The owner reveals that he sells an average of 250-400 dishes a day, which gives about 9,000 monthly. For this desserts and drinks, what It consists of a total of approx. 540 thousand monthly turnover.
“Moral from this fairy tale: pizza is not only flour and cheese. The industry is barely barely zoning since 2020 (Covid, inflation +80 percent on products, Polish order, i.e. rising labor costs). We are doing advice, because we have a lot of movement, but the mass of pubs unfortunately will fall” – explains the restaurateur.
It also refers to frequent accusations that in Italy pizza can cost less. He admits that prices may be lower, but this is even because of the cheaper flour and other products, which are the basis for business.
“PS we did not take yachts or other cars on KPO,” the owner of Vaffanapoli, referring to the recently revealed irregularities in spending EU funds for the HoReca industry.
