Quick and healthy summer dinner: Mediterranean bowls with shrimp, pesto and quinoa – freshness and intense taste in just 25 minutes

Looking for a quick, healthy and delicious dinner for crowded evenings? We propose a Mediterranean recipe for refreshing bowls, which combines arugula and quinoa with fragile shrimp, giving you a generous portion of weak proteins and fiber.

During the summer, when we want to spend as much time outdoors, fast and tasty meals become essential. In a previous edition, we presented a plan of summer who inspired by the Mediterranean diet-recognized for its benefits on heart health and preventing chronic diseases-with simple, rich in fresh and seasonal ingredients, ready in no more than 25 minutes.

As I promised, we start with the recommended recipe for Monday: refreshing bowls, quinoa and pesto – perfect for a fast, healthy and flavored summer dinner (See also video).

Ingredients required for 4 servings of bowls with shrimp, pesto and quinoa

  • ⅓ pesto cup (basil or your favorite)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • 450 g large shrimp, clean and dry
  • 4 cups arugula
  • 2 cups quinoa boiled
  • 1 cherry red mug, cut in halves
  • 1 avocado cut into cubes.

How to prepare refreshing bowls with shrimp

  1. In a large bowl, mix pesto, balsamic vinegar, olive oil, salt and pepper. Take 4 tablespoons of dressing and keep them separately.
  2. Heat a pan on medium-high heat and brown the shrimps for 4-5 minutes, until it has a golden color, with slightly caramelized accents. Get them out.
  3. Add in the large bowl of arugula and quinoa and mix well with the dressing.
  4. Divide the mix into four bowls, then add the tomatoes, avocado and shrimp above.
  5. Sprinkle each bowl with one tablespoon of the pesto dressing.

Bonus tips

  • You can prepare the dressing in time and keep it in the refrigerator for up to 2 days, to earn time on busy days.
  • For added freshness and texture, add cucumbers, peppers or black olives.
