
It turns out that beets can be used to prepare many interesting dishes at any time of the year. Below are three unusual recipes that are easy to replicate at home.
Beetroot pkhali
This appetizer is perfect for both a regular dinner and a holiday table.
To begin with, bake 400 grams of beets. The vegetable is wrapped in foil and cooked in the oven at 180 degrees for about an hour. After cooling, the beets are cleaned. Then chop 80 grams of walnuts, finely chop the onion and lightly fry it until soft. Cilantro and two cloves of garlic are also finely chopped.
All ingredients are combined: beets, nuts, onions, herbs, garlic, a teaspoon of hops-suneli, salt, pepper and a little red wine vinegar. The mass is punched until smooth, after which it is formed into balls or served as a pate. You can add pomegranate seeds on top.
Beet caviar
This caviar is served with meat, spread on bread, or eaten just like that. About 500 grams of beets are baked in foil until soft, then peeled and grated. The carrots are also grated, and the onions are finely chopped.
First fry the onion in vegetable oil, then add the carrots. After a few minutes, add beets and a couple of tablespoons of tomato paste. Vegetables are simmered covered for about 15 minutes. At the end add salt, pepper, a little sugar, a teaspoon of vinegar and chopped garlic. After cooking, the caviar is allowed to brew a little.
Rolls “Cardinal”
This option is especially popular among lovers of beautiful presentation. The dish looks bright and looks great on the holiday table.
The beets are baked in advance in foil, then cooled and cut into thin slices. Separately grate boiled eggs, potatoes and carrots. Lightly salted herring fillets are cut into small strips. The beet slices are laid out overlapping on the film, and cream cheese is spread on top. Then eggs, potatoes, carrots, dill and herring are laid out in layers.
After this, everything is carefully rolled up and put in the refrigerator for a couple of hours. Before serving, the appetizer is cut into portions.
