I mix a spicy appetizer with meat in a bowl – the guests ask for more: I’m one hundred percent ready for May

In early May, when the meat is sizzling on the coals, it needs a bright contrast. Store-bought ketchups and ready-made adjikas are often too sweet or contain preservatives that overpower the smoky taste. A homemade spicy appetizer made from tomatoes and peppers solves this problem: it removes the feeling of heaviness after a fatty kebab and is prepared from what is in the refrigerator or cellar.

What you will need:

3 large ripe tomatoes
2 hot capsicums
4 cloves garlic
1 tablespoon vegetable oil
A pinch of salt and dried oregano

How to cook:

  • Cut the tomatoes into small cubes, remove the seeds with a spoon so that the appetizer does not leak.
  • Remove the membranes from the pepper and finely chop the pulp along with the garlic.
  • Combine the vegetables in a deep bowl, pour in the oil, salt and add oregano.
  • Stir and leave on the counter for 15 minutes so that the vegetables release their juice and the flavors combine.
  • Place the appetizer on plates next to the skewers.

The spicy component and sourness of the tomatoes create a balance that is easily perceived and does not overwhelm the taste of the meat. The oil binds the components together and softens the harshness of the pepper.

Adjust the spiciness with the amount of pepper. For a mild version, leave the seeds inside; for a hot version, add them to the cut. The snack can be stored in a closed glass jar in the refrigerator for up to three days.

Serve in small bowls or place into serving bowls.
