I serve this to the barbecue – the sauce disappears first: guests ask for the recipe, not more meat

If you think sauce should be runny or white, this recipe will convince you. It is thick, rich and ready in 7 minutes from what grows under the window or lies in a bag in the refrigerator.

You will need:

Walnuts – ½ cup
Fresh cilantro – 1 large bunch
Garlic – 3 cloves
Vinegar (preferably grape or apple) – 1 tbsp. spoon
Water – 2-3 tbsp. spoons
Salt – to taste
A pinch of hot pepper

How to cook:

  • Grind the nuts in a mortar or blender until they form coarse crumbs.
  • Finely chop the cilantro.
  • Add finely grated or crushed garlic.
  • Pour in the vinegar, add salt, pepper and a little water.
  • Mix well until smooth but grainy.
  • Serve immediately.
