After this dinner I don’t want to lie down: I bake fish with vegetables – simple, satisfying and without heaviness

Many people want to eat in the evening, but are afraid of feeling heavy after dinner. This recipe is not about diet or restrictions. It's about natural lightness. Fish and seasonal vegetables give you a feeling of fullness without overloading your digestion. It's ready in 30 minutes and smells so good the whole family will gather.

What you will need:

White fish fillet – 2 servings
Zucchini – 1 piece
Young carrots – 2-3 pieces
Lemon – half
Olive oil – 1 tablespoon
Salt, black pepper, dried thyme or dill – to taste
Fresh herbs – for serving

How to cook:

  • Cut the zucchini into slices and carrots into thin slices.
  • Place the vegetables on a baking sheet, drizzle with oil, sprinkle with salt, pepper and herbs.
  • Place in the oven preheated to 180°C for 15 minutes.
  • Meanwhile, cut the fish into portions, sprinkle with lemon juice, lightly salt and pepper.
  • After 15 minutes, remove the baking sheet, place the fish on top of the vegetables and return to the oven for another 12-15 minutes.
  • Sprinkle the finished fish with fresh herbs and serve immediately. It turns out juicy, and the vegetables are soft, but not boiled.
