
This versatile appetizer will be your go-to when you need to quickly prepare something light, tasty and beautiful. Ingredients:
ripe avocado – 1 pc.
soft cottage cheese 5–9% or Greek yogurt – 150 g
fresh cucumber – ½ pc.
greens – a small bunch
lemon juice – 1 tsp.
salt, black pepper – to taste
pita bread, toast or vegetable sticks – for serving
How to cook:
- Peel the avocado, remove the pit and mash with a fork until creamy.
- Add cottage cheese or yogurt, finely chopped cucumber, chopped herbs, lemon juice, salt and pepper.
- Mix well until smooth.
Serve however you like:
- spread on toasted toast for a morning delicacy
- wrap it in pita bread with lettuce for a quick lunch,
- layer in glasses with cherry tomatoes for an elegant appetizer for guests.
