I bake oatmeal pancakes for Maslenitsa: soft, without flour and sugar – and do not harm the figure at all

If you're craving pancakes, but want to skip the white flour, refined sugar, and heaviness in your stomach, try this oatmeal-based recipe. The pancakes are tender, slightly nutty in taste, with a pleasant texture and a light golden crust. Ready in just 20 minutes.

Ingredients:

Non-instant oatmeal – 1 cup (90–100 g)
Water or plant milk – 300 ml
Egg – 1 pc.
Salt – a pinch

How to cook:

  • Grind the oatmeal in a blender until it becomes a fine flour.
  • Add water or plant milk, egg, salt and vanilla, if using.
  • Beat everything until smooth, the dough should be fluid like cream.
  • Let stand for 5-7 minutes so that the oatmeal swells a little.
  • Bake in a non-stick pan without oil or with a drizzle of coconut/olive oil. Pour a small amount of batter and spread in a circular motion.
  • Fry for 1–1.5 minutes on each side until lightly browned.

Serve warm with sliced bananas, berries, a dollop of natural yoghurt or a drizzle of honey.

Bon appetit!
