
Maslenitsa is the time when the house is filled with the aroma of fresh pancakes, and those closest to you gather around the table. Pancakes here are not just food, but a symbol of sun, warmth and family comfort. And if they turn out tender, delicate and with crispy edges, then they disappear faster than you can pour yourself some tea.
Ingredients:
Warm kefir – 500 ml
Eggs – 2 pcs.
Sugar – 3 tbsp. spoons
Salt – ½ teaspoon
Vegetable oil – 2 tbsp. spoons
Wheat flour – about 300 g
Hot milk – 150 ml
Soda – 1/2 teaspoon
How to cook:
- Add sugar, salt and vegetable oil to warm kefir and stir.
- Gradually add the sifted flour, stirring constantly with a whisk to avoid lumps.
- Cover the bowl with a towel and let the dough rest for 15-20 minutes.
- Beat in the eggs and mix until smooth.
- Pour hot milk in a thin stream, continuing to stir.
- At the very end, add soda. The mixture will foam slightly, this is normal.
- Heat the frying pan well (no need to grease – the oil is already in the dough).
- Pour the batter into the center, spreading it lightly with a spoon or twisting the pan.
- Fry until golden brown on both sides.
Serve hot with sour cream, jam, honey or just butter. These pancakes are ideal for both a cozy breakfast and a festive Maslenitsa table.
