
Cabbage is one of the simplest and most accessible vegetables, especially in winter. But often it seems bland, dry, or just an “obligatory” side dish. But once you add the right dressing, an ordinary salad turns into something for which guests stay at the table longer than expected.
You will need:
3 tablespoons vegetable oil
1 tablespoon apple cider vinegar or lemon juice
1 teaspoon honey or maple syrup
1 clove of garlic
A pinch of ground cumin
Salt – to taste
Fresh herbs – a handful
How to cook:
- Grate the garlic on a fine grater or crush it in a press.
- In a bowl, combine oil, vinegar or lemon juice, honey, salt and cumin.
- Add the garlic and beat well with a fork until smooth.
- Finely chop the greens and stir into the dressing.
- Let sit for 5-10 minutes.
This dressing is ideal with fresh white cabbage, Korean carrots, cucumbers or a mix of seasonal vegetables. It is light, does not interrupt the taste, but adds juiciness.
