
Stewed beets are an indispensable ingredient for borscht, vinaigrette and even homemade snacks. It is sweet, aromatic and rich in iron and antioxidants. But it takes a long time to cook it on the stove: you need to monitor the water, wait 40–60 minutes, and then wash the pan from burgundy stains.
In fact, everything is much simpler. Beets can be stewed in just 12 minutes in the microwave. It turns out soft, dark burgundy, with a rich taste and a slight honey note.
Here's how to do it:
- Peel the beets and cut them into small cubes.
- Place in a deep microwave-safe bowl.
- Add 2-3 tablespoons of water, a pinch of salt and, if desired, a teaspoon of apple cider vinegar or a slice of onion. This will enhance the color and flavor.
- Cover with a lid or cling film with a small hole for steam.
- Microwave at maximum power for 10 minutes.
- Remove, stir gently, cover again and let stand for 2-3 minutes.
- If desired, add a drop of vegetable oil or herbs at the end.
The finished beets are juicy but not watery, with rich color and natural sweetness. It can be immediately added to borscht, mixed into a vinaigrette, or served as a side dish for stewed fish.
