
If you want to plant carrots that remain sweet, firm and flavorful even into February, choose varieties with thick skins, high carotene content and minimal pith. Such carrots do not wither in boxes, do not rot from moisture and do not lose their taste for months.
Among all the varieties, three proven options for winter storage stand out.
Nantes 4 – a classic among gardeners. Its roots are cylindrical, 15–18 centimeters long, bright orange, with thin skin and practically no woody core. The pulp is juicy, sweet, with a delicate aroma. This variety is ideal for fresh salads, juices and stews, and when properly stored in sand or parchment remains in excellent condition until March.
Vitamin 6 – late-ripening variety with a high carotene content. Root crops grow up to 20 centimeters, blunt-ended, dense, with smooth skin. Its taste is richly sweet, even in the middle of winter. Carrots do not crack during storage and are resistant to rot, and due to their delicate texture they are excellent for freezing and baby food.
Samson – a Dutch hybrid bred specifically for long-term storage. Its root crops reach 25 centimeters, they are smooth, heavy and almost without a core. The pulp is crisp, like morning frost, and does not lose its juiciness even after four months in the cellar. When cut, it does not darken and does not produce bitterness, so this variety is ideal for large families and preparations for future use.
To ensure carrots retain their quality, store them in a cool, humid place at a temperature of 0 to 2 degrees. Before planting, do not wash the root vegetables; just dry them and carefully trim the tops to zero. If you keep carrots indoors, use boxes of damp sand or parchment bags. It is useful to add a little onion or garlic to each box; they will naturally repel fungus and pests.
Such carrots will become the basis for vitamin-rich salads, stewed vegetables, aromatic soups and even homemade juices.
