The coming year 2026 will pass under the sign of the Fire Horse – a symbol of dynamics, vitality and transformation. This is a great opportunity to create a special New Year's menu that matches the spirit of the times. Three recipes that reflect the character of the hostess of the year and will help make the holiday table memorable.

“Horses of Fortune” – beef rolls with vegetablesAnd

The image of a swift horse is embodied in elegant meat rolls, where each element is filled with a special meaning. Tender slices of beef symbolize power and grace, while colorful strips of vegetables represent the diversity of life's paths.

Ingredients:

  • 8 thin slices beef tenderloin
  • 2 carrots
  • 2 sweet peppers (red and yellow)
  • 2 cloves garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon hot chili pepper
  • Green onions for serving
  • Salt, pepper to taste

Cooking method:

Cut the peeled carrots and peppers into thin long strips. Fry the vegetables in hot oil for 2-3 minutes, add chopped garlic. Lightly pound the beef slices, add salt and pepper. Place vegetable filling on each slice and roll tightly. Fry the rolls on all sides until golden brown. Mix soy sauce, honey and chili pepper. Pour the sauce over the rolls and simmer over low heat for 5-7 minutes. Serve garnished with green onions.

“Fiery Mane” – salad with salmon and vegetables

Long vegetable strips symbolize the flowing mane of a running horse, and red fish corresponds to the fire element of the year. Salmon attracts financial well-being, and fresh vegetables attract health and vitality.

Ingredients:

  • 300 grams lightly salted salmon
  • 2 fresh cucumbers
  • 2 carrots
  • 1 yellow bell pepper
  • 4 eggs
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Fresh dill for garnish
  • Salt, pepper to taste

Cooking method:

Cut the salmon into thin slices. Cut the cucumbers, carrots and peppers into long strips. Boil the eggs, cool and cut in half. For the dressing, mix olive oil, lemon juice and mustard. Carefully combine all ingredients and season with sauce. Place the salad in a mound, garnish with egg halves and dill sprigs.

“Golden Horseshoes” – spicy cookies

The horseshoe is a classic symbol of good luck, especially relevant in the Year of the Horse. The golden color of baked goods attracts wealth, and spices activate the fiery energy of the year to make wishes come true.

Ingredients:

  • 300 grams of wheat flour
  • 150 grams butter
  • 100 grams of honey
  • 1 chicken egg
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • Pinch of cayenne pepper
  • 100 grams of powdered sugar for glaze
  • Red food coloring

Cooking method:

Beat softened butter with honey and egg. Add sifted flour with spices, knead into a homogeneous dough. Roll out the layer 1 cm thick, cut out horseshoe shapes. Bake at 180°C for 15-20 minutes until golden brown. For the glaze, mix powdered sugar with water and red food coloring. Decorate cooled cookies with frosting.
