
Bruschetta is the perfect holiday appetizer. They are crispy, portioned and work great even with the simplest filling. And if you make it from baked vegetables and goat cheese, you get real magic: juicy, aromatic, with a slight sourness and a piquant touch.
Ingredients (for 10–12 bruschettas):
Thin baguettes or ciabatta – 200 g
Ripe cherry tomatoes – 15 pcs.
Yellow bell pepper – 1 pc.
Goat cheese – 100 g
Honey – 1 teaspoon
Fresh basil – a handful
Olive oil – 2 tbsp. spoons
How to cook:
- Cut the cherry tomatoes in half and the peppers into strips.
- Bake the vegetables in the oven at 180°C for 15 minutes with a spoonful of butter. Cool.
- Mix goat cheese with honey and a pinch of salt. The result will be a tender, slightly sweet paste.
- Cut the baguette into thin slices and lightly dry in a frying pan.
- Spread the cheese spread on each slice.
- Top with a spoonful of warm vegetables.
- Sprinkle with finely chopped basil and a drizzle of olive oil.
- Serve immediately.
After 10 minutes, the bread will begin to become soggy and the basil flavor will dissipate. But in these 10 minutes, guests will definitely have time to eat everything and ask for the recipe.
