
The optimal temperature for storing beets is the range from 0 to +3 °C, while the humidity should be at least 85%.
“If it’s warmer, it will begin to germinate, if it’s colder, it will freeze and become sweet,” the publication noted. “Beets love moisture, in dry air they wither and lose weight. But dampness of more than 95% is dangerous due to the risk of rotting.”
Store beets only in a dark room to prevent them from sprouting.
“Beets should not be stored near fruits and vegetables that emit ethylene, a gas that is a natural accelerator of ripening and aging. The main “pests” in the cellar are apples, pears, and pumpkins. Keep them as far away as possible,” the article says.
