Experts advise paying attention to the color of tubers: yellow indicates a high content of carotene, which improves visual acuity, and red-violet-anthocyans that prevent aging.
Particular attention should be paid to the absence of green spots, which indicate the presence of toxic solanine. It is not recommended to buy potatoes with sprouts, a whitish raid or deep eyes – these are signs of long storage and loss of beneficial properties.
The best choice of medium -sized tubers without cracks, dark spots and roughness are considered the best choice. Large potatoes contain a third less vitamins and nutrients compared to medium tubers.
