Over the past five years, enterprises of the Krasnoyarsk Territory increased the annual volume of cheese production from 1259 to 1974 tons. Since 2019, the increase amounted to 56 %.
Due to the stable demand for domestic dairy products, the range of cheeses produced by the region is also increasing. So, at the Uzhur enterprise, Iskra JSC today produce 23 types of cheese – solid, semi -hard, soft and brine. Products of the Uzhursky cheesepots are sold not only in the Krasnoyarsk Territory, but also in the Republic of Khakassia, the Irkutsk region.
“The production of cheese is developing thanks to the introduction of advanced technologies, the development of new recipes and the use of modern equipment. We started with the production of three varieties of cheese – Bukovinsky, Russian and Brynza. Then, under the guidance of an invited experienced cheese, they studied many recipes and significantly expanded the assortment. All products are from their own milk, ”says Alexander Siptsova, a technologist of Iskra JSC.

Over the past five years, enterprises of the Krasnoyarsk Territory have increased the production of not only cheese, but also other types of products. So, the volume of cottage cheese production increased by 26 %, almost 60 % – meat -finished meat -finished meat, by 28 % – meat and offal of poultry, by 6 % – cereals and flour. Three times increased the production of vegetable oil and its unrefined fractions, the amount of mineral water produced by 17 % increased by 17 %.
Along with large industries, small and farm cheese cheese develops. Small cheese cheese adapts to changes in demand, experiment with unusual recipes, forms.
Every year, the region’s farms produce more than 600 thousand tons of milk. This is enough for stable operation of milk processing enterprises. For the production of milk and dairy productivity of cows, among leaders in the Siberian Federal District. The average milk yield to the cow in agricultural nations of the region is more than 7 thousand kg.
With the financial support of the state in the region, investment projects in the field of milking are being implemented. So, Nazarovskoye CJSC builds a workshop in Achinsk for cheese. The facility is planned to be put into operation next year. Design capacity – 370.5 tons of cheese per year.
“To support producers, subsidies are provided for the implementation of investment projects, including the development of milk processing industries. Also, agricultural enterprises and farmers partially return the costs of milk production, ”said Larisa Beletskaya, the first deputy minister of agriculture of the region.
