The first methods of freezing the food involved mixing the salt with ice, which reduces the frost and it is quite easy to reach temperatures below -14 ° C. It is not known who invented the process, but the suspicion falls on the Chinese.
The technique did not reach Europe until 1503, in Italy, where it was considered a chemist trick, but it was used for food only in 1660.
