
At the end of winter, you want something light, but with vitamins, especially when you have little strength and a long day ahead. Frozen berries, harvested in the summer, are the ideal solution. From them you can make tender, airy cheesecakes without flour, which even the most picky children eat.
You will need:
Cottage cheese (5–9%) – 300 g
Egg – 1 pc.
Frozen berries – 3-4 tbsp. spoons
optional – a pinch of vanilla or cinnamon
How to cook:
- Mash the cottage cheese with a fork until smooth.
- Add the egg and mix until creamy.
- Gently stir in the frozen berries without defrosting them to prevent the batter from becoming watery.
- Form into small cakes.
- Fry in a non-stick frying pan on both sides for 2-3 minutes until golden brown.
- Serve warm with honey, yoghurt or simply sprinkled with powdered sugar.
You can bake the cheesecakes in the oven at 180°C for 15–20 minutes if you want a very light option.
This breakfast is rich in protein, calcium and vitamins from the berries. It is soft, not dry, gives you a feeling of fullness for a long time and does not require sugar or flour.
