
Honey cake first appeared in the 19th century – it was given as a gift to the wife of the Russian emperor for a festive dinner. It’s funny, but before this the Empress was not particularly fond of cakes with honey, but it was the honey cake that was able to win her heart and forever instill a love for this ingredient.
Today, honey cake is firmly among the top ten best confectionery products in the world. It is prepared in different ways: chocolate or condensed milk is added. Today we offer a lazy recipe.
What you will need
For the test:
- butter – 120 g
- honey – 120 g
- baking soda – one and a half teaspoons
- lemon juice – two teaspoons
- eggs – 4 pieces
- salt – one small pinch
- vanilla sugar – one teaspoon
- regular sugar – 120 g
- flour – 250 g
For cream:
- sour cream 32% fat – 500 g
- boiled condensed milk – 400 g
- powdered sugar – two tablespoons
How to cook
Combine honey and butter in a saucepan, then melt them over medium heat. Soda and lemon juice are also added there, after which, stirring constantly, the mixture is brought to a golden color. The honey mass is left to cool to 35–40 degrees.
Meanwhile, beat eggs with salt, vanilla sugar and regular sugar with a mixer until a fluffy white mass is obtained. The cooled honey mixture is gradually poured into the egg mixture, stirring gently. The flour is sifted and added to the same container, after which the dough is thoroughly kneaded. Cover the baking pan with parchment and pour the finished dough into it.
The biscuit is baked in a preheated oven at medium temperature under the lid for 45–50 minutes. Check readiness with a skewer, and then cut the biscuit into 6 thin cakes. The topmost cake is set aside and crushed into crumbs.
For the cream, simply mix sour cream with boiled condensed milk and powdered sugar. Each cake is generously coated with cream and placed in a pastry ring. The cake is put in the refrigerator for 2 hours, then covered with the remaining cream and sprinkled with biscuit crumbs. Bon appetit!
