
If you want to treat yourself to a delicious dessert but are strictly controlling calories, this recipe is made for you. Airy, healthy and incredibly light cottage cheese soufflé will be a great end to the day and will give you a feeling of fullness without harming your waistline.
You will need:
Soft cottage cheese (up to 5% fat) – 200 g
Eggs – 2 pcs. Rice flour (or corn) – 2 tablespoons
Sweetener – 1-2 teaspoons
Vanillin or vanilla extract – a pinch
How to cook:
- Mash the cottage cheese with a fork or beat with a blender until smooth and creamy without lumps.
- In a separate bowl, gently beat the eggs with sweetener and vanilla until light foam appears.
- Combine the curd base with the egg mixture, add rice flour and mix thoroughly until smooth.
- Prepare small baking dishes.
- Divide the mixture into the molds, filling them about three-quarters full, as the soufflé will rise when heated.
- Place the molds in an oven preheated to 180°C for 20–25 minutes.
- Check readiness with a wooden skewer: if it comes out dry and clean from the center, the dessert is ready.
- Let the soufflé cool slightly in the molds, then carefully remove.
- If desired, garnish with fresh berries or a sprig of mint.
