
Many people refuse evening meals or choose only low-fat yogurts, but nutritionists recommend combining fiber with vegetable protein. One such option is a chickpea and fresh vegetable salad that can be easily assembled in 10 minutes.
You will need:
Canned chickpeas – 200 g
Cucumber – 1 piece
Cherry tomatoes – 6–8 pieces
Olive oil – 1 tbsp. l.
Greens – a small bunch
Feta or Adyghe cheese – 50 g
Lemon juice, salt, pepper – to taste
How to cook:
- Rinse the chickpeas with cold water and dry with a paper towel.
- Cut the vegetables into medium pieces, add chopped herbs.
- Mix everything in a bowl, season with oil, lemon juice and spices.
- Crumble the cheese on top and let the dish sit for 5 minutes.
