
Ukrainian restaurateur Evgeniy Klopotenko shared a recipe for natural marshmallows on his website.
“We prepare marshmallows without refined sugar and on agar-agar. It turns out to be as elastic and tender as possible,” Klopotenko emphasized.
Ingredients:
- 8 g agar-agar;
- 50 ml water;
- 150 g applesauce;
- 2 tbsp. l. honey;
- 1 tsp. lemon juice;
- two proteins;
- 50 g coconut flakes (for decoration).
Preparation
- Soak 8 g of agar agar in 50 ml of water. Leave to swell for 5 minutes.
- In a saucepan, mix 150 g of applesauce, 2 tbsp. l. honey, 1 tsp. lemon juice. Place agar-agar and put on fire. While the syrup is heating, start beating the two egg whites in a food processor at medium speed.
- When bubbles appear on the surface of the syrup, it is ready to be added to the whipped whites.
- Gradually add the syrup to the whites, continuing to beat. In total, it takes about 7 minutes to churn the mass.
- Place the finished protein mixture in a pastry bag and place the marshmallow halves on a silicone-coated mat.
- Give the marshmallows three hours to stabilize. Next, sprinkle the halves with coconut flakes.
- Connect the marshmallow halves together and serve the delicious treat to the table.
