
During fasting or when switching to a plant-based diet, it is important to maintain a balance of nutrients in the diet. It is recommended to include dishes rich in plant protein and fiber in the menu, and an excellent example of such a dish is lentils with tomatoes.
Ingredients:
Red lentils – 100 g
Tomato paste or pureed tomatoes – 2 tablespoons
Onions – 1 medium head
Preparation:
- Rinse the lentils and boil in water until soft for about 15 minutes, do not add salt.
- Finely chop the onion and fry in a small amount of vegetable oil until transparent.
- Add tomato paste to the onion and heat for 1-2 minutes to remove excess acid.
- Combine the prepared lentils with the tomato and onion dressing and mix thoroughly.
- If desired, add a pinch of dried basil or garlic for flavor.
For a richer taste, you can add fried champignons or bell peppers.
