When prices don't keep fast. Why it costs more to fast in rich cities

Today begins the Easter Lent, considered the longest and harshest fast of the year. HotNews analyzed the prices in 42 cities in Romania with the help of the National Institute of Statistics, which shows that the difference between the cheapest and the most expensive city can exceed 100% – that is, for the same plate of fasting food, you pay double if you are in Cluj compared to Brăila.
Three dishes were the basis of the analysis: a bean stew with vegetables, a rustic mashed potato with carrot and garlic, and a warm potato and white bean terrine with garlic emulsion and honey glaze.
The prices of the ingredients—potatoes, dried beans, onions, garlic, carrots, apples, and honey—were collected from each city and used to calculate the actual cost of each dish.
Top 10 cities where you eat the cheapest Lent
Brăila leads detachedly. A bean stew here costs 18.81 lei — almost 19 lei less than in Cluj-Napoca. Câmpia Muntenia and Oltenia generally dominate the first places, with cities such as Craiova, Slatina, Târgoviște and Slobozia.

Top 10 cities where you eat the most expensive fast food
The cities of Transylvania and the north-west of the country are at the top of the reverse ranking. Cluj-Napoca, with a stew of beans at 37.50 lei, is the most expensive city in the analysis. Next Wednesday Ciuc and Zalău. Timișoara, Brașov and Oradea complete the list of cities with high prices.

Why does this difference exist?
Prices of basic ingredients explain most of the gap. Dry beans, for example, cost 11.60 lei/kg in Brăila and reach 25.25 lei/kg in Miercurea Ciuc — more than double. Dried garlic varies between 29.25 lei/kg (Călăraşi) and 46.67 lei/kg (Timișoara). Honey, an ingredient in terrine, varies from 27 lei/kg (Satu Mare) to 45 lei/kg (Cluj-Napoca).
Logistics, the bargaining power of local traders, population density and the agricultural tradition of the area are factors that influence the final price on the shelf. Cities in the Danube Plain, closer to agricultural areas, generally benefit from lower prices for vegetables and legumes.
Conclusion: the job is more accessible than it seems, if you know where
At the national level, a fasting meal of basic ingredients does not exceed 15 lei in half of the analyzed cities. Even in the most expensive cities, fast food remains affordable compared to meat alternatives. The difference is where you live—and perhaps what market you choose to go to.
Brăila remains, clearly, the unofficial capital of the cheap station in Romania. Cluj, unfortunately for the budget of those who fast, is at the opposite pole.

Bean stew with vegetables
Beans: 1 kg of dry beans (white or colored).
Vegetables:
2 large onions 2-3 carrots 1 parsnip or celery root (optional, for flavor) 1 bell pepper (red or yellow) 3-4 cloves of garlic
Sauce base:
400 g diced tomatoes (in broth) or 2-3 tablespoons tomato paste 50 ml oil
Flavors:
1-2 bay leaves 1 teaspoon paprika Dry thyme (to taste) Salt and freshly ground black pepper Fresh parsley to finish
Optional: 1-2 diced potatoes (to thicken the stew).
Lenten potato, bean and carrot terrine
Ingredients:
600g potatoes (flour variety, boiled in their skins, peeled and thinly sliced) 400g boiled white beans (or 2 cans), drained well 2 cloves of garlic, finely chopped 1 medium onion, finely chopped 30g breadcrumbs (for lining the pan) Olive oil for greasing Salt, pepper, fresh/dried thyme
For the garlic emulsion:
1 head of garlic
100ml olive oil
1 tablespoon lemon juice
For the honey glaze:
2 tablespoons honey 1 tablespoon olive oil 1 teaspoon apple cider vinegar or soy sauce Optional: a pinch of chili flakes or smoked paprika
Boil the potatoes separately (in their skins, they retain their structure), the carrots – until they are soft, and the beans.
Cream of beans (the binder): Puree the beans very finely. Add crushed garlic. DPut 1 tablespoon of oil – it helps the texture.
It should be thick, not runny.
Assembly (important!): Cut the potatoes into thin slices. Grate the carrots. In a small form lined with baking paper: potato layer, thin bean cream layer, carrot layer. Repeat and then press well with the spoon.
Leave to cool for 15–20 min (or even 30 min).
If you want it extra-firm: put the mold in the oven for 10-15 minutes at 180°C. It compacts even better.
Fast glaze (fancy finish): Mix: honey, very fine garlic, a little warm water. Add just a few drops for sweet-salty contrast.
Small restaurant trick: If you want perfect slices, put the terrine in the fridge for 1 hour, cut with a knife dipped in hot water
It's the kind of dish that might appear in a modern “new country cuisine” bistro.
Mashed potatoes with carrots
Ingredients:
600 g of white potatoes
400 g carrots
50 g of oil
1 small onion
1 clove of garlic (optional)
1 bay leaf
salt, pepper
For the Orthodox, Easter Lent (Great Lent) lasts 48 days in total: 40 days of actual fasting, to which Holy Week is added. For Catholics, Lent lasts 40 days, from Ash Wednesday to Maundy Thursday.
