
The beginning of February is a time of lightness, freshness and self-care. And juicy oranges and fragrant honey turn any dessert into a real winter gift. And you don't need to turn on the oven or stand at the stove for hours. All it takes is 20 minutes, and a delicate, refreshing cake with a citrus note and the slight sweetness of honey appears on the table.
You will need:
- 2 large oranges
- 200 g shortbread cookies
- 120 g butter
- 400 g soft curd cheese
- 3 tbsp. l. honey
- Zest of 1 orange
- 10 g gelatin
- 80 ml water
How to cook:
- Grind the cookies into crumbs.
- Melt the butter and mix with the crumbs.
- Place in a springform pan and press the bottom tightly.
- Fill the gelatin with water and let it swell for 10–15 minutes.
- Then gently heat until completely dissolved.
- Peel the oranges and remove membranes, cut into slices and lightly squeeze out the juice.
- In a bowl, combine curd cheese, honey, zest and cooled gelatin.
- Beat until smooth.
- Add citrus slices and stir gently.
- Pour the mixture onto the base and smooth the surface.
- Place the cake in the refrigerator for 3-4 hours.
- Before serving, garnish with thin orange slices or a pinch of zest.
The cake turns out airy, with a slight sourness, a fresh aroma of citrus and the subtle sweetness of honey.
