
Ukrainian culinary YouTube blogger Ivan Yanyuk on January 31 told how to make a delicious cake without an oven or a frying pan.
According to the blogger, the cake according to this recipe will turn out very tender and tasty, and will look like it came from a good confectionery shop.
Products for cream:
- 100 g sugar;
- 1 tsp. vanilla sugar;
- 50 g wheat flour;
- 2 eggs;
- 450 g sour cream with a fat content of at least 30%;
- 100 g butter with 82% fat content.
Products for the base:
- In a heavy-bottomed saucepan, combine sugar, vanilla sugar and flour. Add eggs, mix well with a whisk. Add sour cream, after draining excess liquid, mix thoroughly.
- Place on low heat and stirring constantly until thickened.
- Once boiling, simmer for 30–40 seconds and remove from heat. Cover the cream with cling film and cool completely – first at room temperature, then in the refrigerator.
- Beat the soft butter with a mixer for three minutes.
- Add the cold custard in several additions, whisking each time.
- At the end, beat for another 15 seconds – the cream should be thick and stable.
- Grind the cookies into crumbs.
- Pour in the melted butter little by little and stir.
- Place half of the crumbs into a mold with a diameter of 18 cm, form the bottom and sides.
- Pour in the cream and smooth it out carefully. Sprinkle the remaining crumbs on top and press lightly.
- Cover with film and refrigerate for at least two hours.
Important nuances
- The fat content of sour cream should be at least 20%, otherwise the cream will not stabilize.
- Be sure to cool the cream completely before combining with butter.
- Oil should only be taken with a fat content of 82%, otherwise the cream may separate.
- If the cake has not become dense within two hours, give it more time to stand in the refrigerator.
