If you're tired of fatty foods but still want something warm and homey, this casserole will be your savior. It is prepared without meat, without oil or with a drizzle, and literally dissolves in your mouth. At the same time, it gives you a feeling of fullness for several hours and does not leave a heaviness in your stomach, even if you ate it for dinner.
And the main thing is that the ingredients can be found in any home: carrots, eggs, semolina or buckwheat, a pinch of spices. Prepared without oven.
Ingredients:
Carrots – 2-3 pcs.
Egg – 2 pcs.
Semolina – 3 tbsp. l.
Milk or water – 2-3 tbsp. l.
Salt – a pinch
Cinnamon or nutmeg – on the tip of a knife
Oil – for greasing the pan
How to cook:
- Grate the carrots on a fine grater.
- In a bowl, mix carrots, eggs, semolina or cooled buckwheat, salt and spices.
- Add a little milk or water until the mixture becomes soft, but not liquid.
- Mix well and let stand for 5 minutes, the semolina will swell.
- Grease the pan with a drop of oil, add the dough and smooth it out.
- Cover with a lid and cook over low heat for 15–18 minutes. Do not turn over; the casserole will cook on top due to the steam.
- Carefully turn the finished casserole onto a plate or serve directly from the pan.
Serve warm with yoghurt, berry sauce or just a cup of herbal tea. It is slightly sweet, tender, with a golden crust on the bottom and is completely digestible by the morning.
Ideal for those who want to feel light after the holidays, but are not ready to torture themselves with cabbage salads.
Bon appetit!
