How long can you store New Year's salads?

During the New Year holidays, residents of the Jewish Autonomous Region actively purchase food and prepare for festive feasts. But Rospotrebnadzor experts warn: it is important to remember the shelf life of New Year’s salads in order to avoid unpleasant health consequences.

As noted by the department, the shelf life of salads depends on their ingredients, and on average ranges from 6 to 36 hours.

“It is important to remember that salads with dressings are a good breeding ground for the growth of microflora and can cause intestinal infectious diseases and food poisoning,” the department explained.

Experts added that salads are highly perishable foods and should be stored in the refrigerator at a temperature no higher than six degrees. For example, salads made from raw vegetables or fruits, poultry and smoked meats can be stored for up to 18 hours, and after dressing, the shelf life is reduced to 12 hours. Salads with boiled eggs or canned vegetables can only be stored for 6 hours. Seafood salads without dressing – up to 12 hours.

“Salads made from pickled, salted or pickled vegetables can be stored for the longest time—36 hours,” noted Rospotrebnadzor.

Also, department experts recommend not leaving salads for the second day and, if there is a lot of food left, giving preference to light dishes made from greens and fresh vegetables without mayonnaise and oil.
