
If in the first days of January you want a light but tasty dish that does not require a trip to the store, this salad will be a real find. Everything you need is already in the refrigerator after the holidays: boiled eggs, pickled cucumbers, some sausage or ham – and you're ready to put together a bright, crispy treat in a matter of minutes. Simple, satisfying and with a slight sourness, which is so necessary after fatty salads.
You will need:
4 boiled eggs
1 jar of pickled cucumbers
150 g boiled sausage or ham
1 bunch of dill or parsley
3 tbsp. l. natural yogurt or low-fat sour cream
1 tbsp. l. mustard
salt, pepper – to taste
How to cook:
- Cut eggs, cucumbers and sausage into small cubes.
- Finely chop the greens.
- In a bowl, mix yogurt or sour cream with mustard.
- Add all ingredients to a bowl, mix gently.
- Season with salt and pepper to taste.
- Let the salad sit for 10–15 minutes in the refrigerator.
Serve in a transparent container. This salad goes great with warm bread or just a cup of tea.
