Fish for dinner is the perfect choice when you want a light but satisfying meal without the hassle. And to keep it from being bland and smelling throughout the entire apartment, two tricks are enough: the right breading and a drop of lemon. The whole family will eat it with pleasure.
Ingredients:
4 pollock or cod fillets – ~600 g
1 egg
3 tbsp. spoons of flour
2 tbsp. spoons of semolina or breadcrumbs
Salt, black pepper, a pinch of ground nutmeg
Juice of 1/2 lemon
Vegetable oil for frying
How to cook:
Prepare the fish: rinse the fillets and pat dry with a paper towel. Sprinkle with lemon juice. This will remove the smell and add freshness. Salt, pepper, add a pinch of nutmeg.
Make the breading:
- In one plate there is flour,
- In the second – a beaten egg,
- In the third – semolina.
Dip each fillet: first in flour, then in egg, then in semolina. Press a little so that the crust “sits”.
Fry over medium heat:
- Heat a frying pan with oil,
- Place the fish and fry for 5 minutes on one side,
- Carefully turn over and cook for another 4-5 minutes.
Serve immediately with lemon wedges, fresh vegetables or buckwheat.
Bon appetit!
Question and answer:
Why does the fish turn out dry?
Due to overcooking or lack of acid. Pollock takes only 9–10 minutes to cook. Lemon or nutmeg helps maintain juiciness.
How to cook fish without smelling in the house?
Marinate the fillet in lemon juice for 5 minutes before frying, the acid will neutralize the fishy smell. Cook over medium heat with the kitchen hood on.
What can you replace breadcrumbs with?
Use semolina. It gives a tender crust, does not dry out or crumble.
